About 16% of the materials deposited in the Lincoln (Nebraska) Landfill is food waste, a situation decried by the Nebraska Farmers Union, whose members produce much of the food. Enter Big Red Worms, the nickname of a Nebraska Famers Union Enterprises program that diverts food waste streams from Lincoln Public Schools, restaurants, and brew pubs, along with animal compost from the Lincoln Zoo and area horse barns. The food waste and other organic waste is precomposted and fed to worms that produce vermicompost castings that are used for gardens and organic-food production, and by specialty-crop producers. more
