Summer's dog days trigger peak shrink

The heat is on. Of course it is. It’s early August, and the dog days of summer are peaking. Along with this, of course, is peak season for produce shrink. Shrink is the difference between what you should sell something for and what is actually sold. If you’re billed, for example, for one 40-pound case of bananas and you’re expected to sell that case for, say, 59 cents a pound. Then instead of selling the case for the ideal $23.60, some product is culled or damaged, and you only account for $21.24. The difference is shrink. more
