Cocoa falls after North American processing data; coffee drops

Cocoa fell the most in almost two weeks in London as bean processing in North America rose less than some traders anticipated. Coffee slid. Bean processing in North America advanced 4.4 percent in the three months to Dec. 31, the Washington-based National Confectioners Association said.

Roastmaster finds grounds for better coffee

For Fazenda Coffee roastmaster Tim Shipp, a perfect cup of coffee has sweetness and delicate flavors behind it. As he roasts specialty coffee in a tidy facility housed in a Dedham warehouse, he sets rigorous standards to bring out the taste characteristics of a bean. "Even the most subtle changes in bean moisture, heating time, and roasting temperature can have profound effects on cup flavor and quality," said Shipp, 28.

Impact of climate change on tea quality

Climate change is reportedly affecting the cultivation of tea in China, with changes in temperatures and rainfall altering not only the taste, aroma and potential health benefits of the popular beverage but also the lives of farmers who grow tea for a living. A research team headed by Tufts University biologist Colin Orians will study this development in a four-year project funded by a $931,000 grant from the National Science Foundation.
