Plant-based beverages gaining ground on milk

The retail industry has reported declining sales and consumption of milk over the past few decades. In comparison, the sales and consumption of nondairy, plant-based beverages have seen a 30 percent rise in recent years. Nondairy drinks of plant origin — "milks" derived from nuts, soybeans, legumes and seeds — are being hailed as the new stars of the beverage industry. Now, a study shines some light on consumer behavior and beverage of choice.
