Bacanora, the lesser-known agave spirit, is finally getting its moment in the spotlight
VinePair
There is one rebel that stands out in every family, and for agave, that rebel is bacanora. Sliding silkily down the throat with a savory, whiskey-like smokiness that lingers on the palate, it’s been casting its charm on the people of Sonora for hundreds of years, but is a mere whisper in America against its behemoth cousins, tequila and mezcal. Outlawed in Mexico until 1992, bacanora has been compared to an American moonshine, and it’s worthy of any serious agave spirit drinker’s attention.

Big split in French wine region
Wine Searcher
It's been coming for a while, but it's still something of a shock to report that two of Languedoc's best-known subregions are leaving the appellation and going solo.
It's the biggest story in a week of upheaval for the wine world, which has also seen spammers slammed, looters rewarded and vineyards grow.

Beyond the (standard) bottle: Wineries are embracing greener packaging
Wine Industry Advisor
Growing and making wine can be done sustainably. According to Grand View Research, the production of organic wine is projected to grow 10.2% between 2022 and 2030, and the space devoted to organic growing has increased in France alone by 249% in the past decade. While hard numbers are difficult to come by, renewable energy — generally in the form of solar power — fuels many wine production facilities across the globe.

Euronews
Once upon a time, wine lists were, quite literally, the domain of the historical, well-established chateaux. But in recent years, consumers are increasingly turned on by the unorthodox.
While it's challenging to picture a world where the celebrated crus of Bordeaux and Burgundy are eschewed from a commercial cellar, curious wine enthusiasts are more and more on the lookout for something 'a bit different.'

Business: As liquor store owners compete for hard-to-find bottles, some turn to bots
The Dispatch
Strange times call for strange measures.
In the world created by the pandemic, business owners have to struggle with a host of issues: tangled supply chains, strained manpower pools, shortages of pretty much everything. This is as true in the liquor industry as it is anywhere else, and, just like anyone else, liquor store owners are thinking outside the box.

Paste Magazine
The craft cocktail is a genre that refuses to define itself by a set string of words. Eater gave it a go by asking 14 experts and writers, “What exactly is a craft cocktail? And how is that different from a classic cocktail? Or an artisanal cocktail? Or just a mixed drink?”

Cost-conscious newlyweds are skipping the Champagne toast in favor of other drinks
VinePair
When event planner Marcy Blum started out in the wedding business nearly three decades ago, a Champagne toast was de rigueur during a couple’s celebration. It didn’t matter if it was decent wine or not, she says. It was customary.
“Now my clients care about the wines and Champagnes they pour — not necessarily expensive, but well thought out and paired with the food,” Blum says.

Shining a light on South African wine
Wine Searcher
South Africa is one of those wine-producing countries that happily straddles the line between Old World and New.
With a wine-producing history going back 363 years, it can hardly be considered new, but its course over those years has been hindered and hampered by various political instabilities, inequalities and infighting.

Michigan liquor tax could be slashed for small distillers, helping farmers along the way
MLive.com
When one tips back their head and downs a shot of craft Michigan vodka, bourbon, gin, or rum, there’s a lot of tax revenue sliding down that gullet.
It shouldn’t taste like bureaucracy, but nearly half of the retail cost for liquor goes to state government.
A proposed law, House Bill 4842, that’s poised to be passed by the state Legislature and head to Gov. Gretchen Whitmer for her signature, could shift some of those revenues back to small distilleries, create greater opportunity for in-state farmers who grow the necessary crops and result in more authentic Michigan spirits.

Can you make vodka out of thin air?
Government Technology
It’s official — magicians live among us. We know them as Air Company, and they’ve blessed us with their magic ability to create alcohol out of thin air.
Using just carbon dioxide, water and solar energy, Air Company’s technology creates pure ethanol. They then use that to make ethanol-based products. It started in 2019 with Air Vodka, the world’s first alcoholic beverage made from carbon dioxide.
