Wine culture is evolving on the Las Vegas strip
Wine Enthusiast
A burgeoning town that grew up on classic cocktails, buffets and steakhouses alongside slightly soused crooners and high-stakes games, Las Vegas has had a bibulous reputation. Comparatively, it’s centuries younger than other culturally rich U.S. cities built on bricks and brownstone that have spent decades upon decades curating their wine selections.

Baijiu gets its due on cocktail menus
Eater
When veteran bartender Ashley Mac landed a job heading up the bar program at D.C. restaurateur Peter Chang’s new Baltimore establishment NiHao, she had zero grasp of what the gig would entail. “Lydia asked me to develop a program centered around this spirit called baijiu. But I was like, ‘what is baijiu?’” Mac says.

Why Napa, Sonoma wineries are hiring top chefs — and why so many became available
North Bay Business Journal
High-end chefs are no longer only working in restaurants in Wine Country. Wineries are hiring them at a rapid pace in order to show off what is in the glass on a level that can’t be found by reading tasting notes or chewing on a cracker. Wine Industry Advisor
Colorado has been producing locally grown and bottled wine since 1890, but it’s just now reaching that adolescent stage of development, in which it establishes who, precisely, it is — and how it relates to the rest of the world.

The hack that turns bad rosé into fancy cocktail syrup
Mashed
Although pink wine has been around since the sixth century B.C., rosé wasn't fully appreciated until recently, per Food52. Perhaps it was because most people associated the wine with Sutter Home's "White Zinfandel," released in 1975.
