With much built-up excitement and anticipation, Sintercafe made its triumphant return at the Los Sueños Marriott in Costa Rica last month. In addition to providing a platform for many great lectures and customer/client interaction, the event saw the inaugural launch of a collaboration between NCA Next Gen, SCTA Next Gen, and Sintercafe Next Gen with a beach cleanup and paddle boarding experience.

Different Yeasts for Different Coffees!?

The science behind coffee is robust. Introducing controlled fermentation by selecting different yeasts to include in the green coffee production process has been proven to yield different sensory attributes. In addition to flavor, lactic acid bacteria is now being used by producers to enhance the quality of the coffee resulting in a cleaner and brighter cup. The final roasting process has also developed alongside the fermentation technology in order to enhance the flavors each producer is seeking. A very educational read!

Brewing a Cup of Immunity

As if we didn't have enough reasons to reach for our morning cup of joe, researchers at Jacobs University say it's plausible that drinking coffee can serve as a preventative measure to protect against COVID-19 infections. The claim is unproven for now but derived from experiments showing that caffeoylquinic (chlorogenic) acid inhibits the interaction (by a factor of 50x) between SARS CoV-2 spike protein in the coronavirus and the ACE-2 receptor, aka the docking station for COVID-19 on the human cell.
